Start with the tasks

Write down the cooking tasks the line must support. Keep preparation methods, batch requirements and the busiest service period visible in the brief. A clear operational description helps frame the equipment review without assuming that a familiar layout is the right one for a different site.

Measure the installation area

Record the available footprint and the route into the building. Include the positions of fixed elements and any clearances that need professional review. Compare the packaged dimensions as well as the operating footprint when planning receiving.

Record utilities before comparing options

Collect the available electrical and gas information from the site team. Mark any information that remains unconfirmed. Equipment selection and any connection work should be reviewed by the people responsible for the site before the order scope is finalized.

Separate equipment from additional work

Identify required stands, accessories and delivery arrangements as distinct line items. If installation, assembly or removal of existing equipment is needed, state that explicitly. Do not infer these services from a general equipment description.
